Pancakes will never be the same...


Everyone that knows me knows that I LOVE PANCAKES! I have tried everything to normal pancakes, blueberry pancakes, m&m, banana, strawberry, cinnamon etc... I LOVE THEM.

Today -- after a kick butt Insanity workout & 8km run with the PUP -- I decided to treat myself. I have seen that SKINNY PANCAKES have been trending on most blogs I follow.

What are they? EASY - 2 INGREDIENT PANCAKES! I promise you they are DELICIOUS & the best part is that they are HEALTHY!

Here is what you need:

1 banana
2 eggs

**told you it was easy**

Directions:

In one bowl, whisk the 2 eggs and in another smash the banana {you want the banana to look like baby food by the time your done smashing} Then combine the two ingredients into a gooey mess. {It can get very messy!} Then, as you would for normal pancakes, add a bit of OLIVE OIL to the pan {don't put too much or you will defeat the healthiness of pancakes}

Pour the ingredients into your pan to make small circles {depending on your pan your "circles" may turn into odd shapes, as mine did} ;)
You can make around 10 pancakes depending on how big you make them!

For a bit more taste add some CINNAMON!

I added some maple syrup for some flavor {again do not drown your pancakes or you will defeat the purpose of the SKINNY Pancake!}
I also added BLUEBERRIES, a personal SUPER-FOOD favorite.
