Back in Pensacola

After a fun trip to Louisiana it's back to Florida! I have been busy busy so posting has been slow... Sorry. The other day we went on a chase to find a restaurant we went to about 4 years ago... For what?

A blackened grouper wrap!

We found it and it was sooo worth it:

Skip the fries and enjoy the fish!

Yum!

New Orleans (Take II)

Following our visit to the WWII museum we roamed the busy streets of New Orleans! I have to admit... I paid to get my palms read! Ill pay again! I loved it and she was wayyyy good! There are plenty around Jackson Sq. so, as I was told, find who gives you the right vibe and  go for it! ;) good luck!

As the evening grew near... It came time to find a place for dinner! Where to? Another restaurant of Chef John Besh, but this time... ITALIAN style!

DOMENICA:

We each ordered from the menu and all nibbled and shared!

Panzanella with cucumbers, red onions and feta cheese...

Shrimp and sweet corn risotto...

Caprese pizza...

The restaurant is located at The Roosevelt hotel about 2 blocks from Bourbon  Street. We had a slight issue with staff and getting seated. Luckily it was solved by our waiter and we were able to enjoy the rest of the evening!

Of course...after finishing it was time to check out the most famous street: Bourbon Street!

Lined with bars, strip clubs, Voo Doo shops, buzzed tourists & locasl, there is plenty to see!

One can only imagine what tomorrow will bring! ;D looking forward!

Kona Grill, LA

LA as in... Louisiana not Los Angeles. A place I have discovered to offer a variety of food and delicious restaurants!

Today I went out with my cousins for lunch and we each enjoyed a yummy meal!

Kona Grill mainly offers sushi but also has  juicy meats and light fish!

Here is what we ordered:

My cousin ordered the Kona burger and choose sweet potato fries vs normal French fries! They were so good!

I had a tuna tower... We all know how much I love tuna ;)

Ill try not to post too much of what I have been eating (especially as I am in indulging!) however, we will be spending some time in New Orleans, where I hear... Food is The main attraction ;) (or at least one of them) so I may be sharing some photos! looking forward to it!

Enjoy!

New Orleans (Take I)

I LOVE THIS CITY! If you have never been to New Orleans... It's a place you need to visit! Yes...it's a "small" city in great America but worth the visit...

Why? Besides the fun little alleys...constant street entertainment and atmosphere...jazz music pouring out of bars...palm readers and fortune tellers...hotels and attractions...it all comes down to aspiring chefs and FANTASTIC FOOD!

We started the day off touring the Bayou... Spotting & holding alligators! After enjoying a classic tour...we made our way to the first dining destination:

Famous Chef: John Besh's
The American Sector

The restaurant is part of the city's amazing WWII museum (another must see!) At the American Sector, one can enjoy burgers (go figure!) shakes, salads, sandwiches, etc...(the typical "American" favourites, but all cooked with CLASS)

Here is what we enjoyed:

Spicy pickles to share! Of course I was thrilled they came in a Mason Jar!

The Ruben sandwich ...

The burger ( half ) ... We tried to be smart and only order HALF portions!

Lastly...the fried shrimp po boy! (A New Orleans classic)

Yummy!

Ps: happy summer! ( today Sweden celebrates midsummer!)

Father's Day BBQ

BBQ... More like HOMEMADE PIZZA on the GRILL!

I haven't posted in awhile... :/ but here is a quick update: I am on VACATION & spending this week with my cousins in the states! Along with me they love to shop and eat HEALTHY

Seeing as today was Father's Day in America we decided to take the traditional summer barbecue and give it a little twist

Here is what we used:

For pizza base:
- Store bought dough (we bought 2 balls of dough and split it between the 5 of us...) it was plenty!

For pizza toppings:
- pepperoni
- tomatoes (red & yellow)
- mozzarella shredded cheese
- feta cheese
- jalapeƱos
- peppers
- onions
Etc... Get creative!

And of course our secret weapon... Adding a great crunch and taste...

The "kamado grill" ;)

Here's how they turned out:

Alex and his pizza before grill...

Just because it is pizza doesn't mean it's not healthy!

Enjoy!!

Lemon "Bizcocho" (cake)

Lemon is always a good idea with warm weather! Sorry it has been awhile since my last post but I haven't had much time in the kitchen! Today however, I had the pleasure  to bake up a little something! A recipe I recently found on a lifestyle blog I follow... Lemon Drizzle Cake!

Here is what you need:

- 3 eggs
- 170g flour
- 170g sugar
- 170g butter
- 1 tsp baking powder

** if you want you can add the zests of lemon to the cake batter... But for my taste testers they prefer it without**

Icing:
- 2 lemons (juice will be for icing)
- 110g powder sugar

** don't have powder sugar? Throw a cup of normal sugar into a food processor, pulse on full power for about 40 seconds and VOILA!!**

Instructions:

- Grab a tin or baking pan (approx. 24x10) and grease for cake batter.
- Preheat oven to 180C (350F)
- Meanwhile, cream all the batter ingredients together until smooth
- pour into baking pan and into oven!

Bake time: 30-35 minutes

- While the cake is baking, squeeze lemons for juice (don't forget to strain it!)
- mix with powder sugar until smooth

Once your cake is ready, poke holes all over and glaze that baby!

Give it some time to cool...
Grab a nice iced tea.. Water.. Sit outside and enjoy your cake! :D

Fresh out of the oven!

Glazed and ready to be devoured!

Good luck & Happy Summer!
